Oxidation flavours are subtle, blending with a pleasant freshness and lovely minerality. This vin jaune is the perfect accompaniment to chicken cooked in vin jaune, any dish containing morel mushrooms or truffle, or even alongside aged Comté cheese.\u003c\/p\u003e\n\u003cp\u003eThe domain might still carry the name of his parents, but Stéphane Tissot (and his wife Bénédicte) took over the family business over 20 years ago. In 1995, Stéphane began to reduce the amount of fertiliser so as to pave the way for organic viticulture. Around this time he also stopped using chemical herbicides altogether. In 1999, the then 28 hectares (now 46 hectares) became entirely organic and, after a few years, the whole domain became biodynamic in 2004 (Demeter certification). Stéphane’s hard work has transformed the quality of the grapes. With such good quality fruit, vinifications are relatively easy and require very little intervention. Natural yeasts are used in fermentation and a very small amount of sulphites are added, nothing else. The end result is an excellent expression of terroir with intense aromas. Stéphane’s quest to convey his many different terroirs has led him to produce nearly 50 different cuvées from many different grape varieties using various vinification methods. For example, for the Savagnin, a variety typical of the Jura, the property produces wines with and without oxidation (i.e. topping up of the barrels) and vin jaune. The old-timers talked about a hillside called Mataret, a vineyard site once known for making legendary wines. Three hectares of clay calcareous soils with veins of shale facing southwest, at 350m elevation, and overlooking the village, this site had been completely abandoned and was covered in chestnut trees and dense brush. Thierry set his mind to making great wines here again. He cleared the hillside and planted it with Altesse and Mondeuse, two indigenous varietals in which he has great faith. Though the vines are still young, the wines produced from this site already show great depth and complexity. With minuscule quantities of production, a somewhat isolated populace, and hordes of visitors year round, the wines of Bugey don't travel far before being slurped with an Alpine meal, or washed down apres-ski.\u003cbr\u003e\u003cbr\u003eVines have been planted in Bugey since Roman times, later resurrected by medieval monks, and only recently (2009) been recognized by France with AOC status. Today there are just three crus in Bugey, with one, Cerdon, dedicated exclusively to the production of sparkling wine.\u003c\/p\u003e\n\u003cp\u003eDaniel Boccard is not going slow, and never has been. A six-time Alps Grand Prix racing champion in the 80's, Daniel retired to his family farm and began the task of making wine from their sub-alpine vineyards in the Savoie. To call his place in the wine world spectacular is selling it short.\u003cbr\u003e\u003cbr\u003eBoccard works without fertilizers or chemicals and makes a wine that is as natural as could be called methode ancestrale. In this manner of producing sparkling wine all fermentation is spontaneous, no added sugars or yeasts, and is accomplished partially in tank at the beginning, but then slowly completed in bottle over the winter and spring following the harvest.
