By March, the water table was partially restored due to snow and rainfall in the mountains. Budbreak began on March 25th and the following two months saw a succession of gentle rainfall as well as very severe hailstorms that our vineyards luckily avoided. After a progressive flowering, warm weather settled in early June and lasted through the summer. Once September came around, the temperature dropped, resulting in ideal conditions for the Nebbiolo harvest. Picking started on August 16th and was completed by October 14th. 2022 was a great reminder of how beautifully resilient vines are, and resulted in low yields yet vibrant, flavorful and juicy wines."

ABOUT THIS PRODUCER

The Vajra family has farmed Bricco delle Viole, the highest cru in Comune di Barolo, since the 1880s.

Aldo Vajra acquired the first organic certification of the region (1971), created private biotype selections (selezioni massali) of Nebbiolo and Dolcetto, pioneered the renaissance of Freisa, a noble yet forgotten local grape (1980) and the cultivation of Rhine Riesling in Piemonte (1985). While a conservative wine producer, Pasquale was always open to new winemaking and cellar management techniques. The vineyards are truly a treasure and are often visited by other producers from the area. The cellar sits close to the top of the Bricco San Giuliano hill, completely surrounded by Pelissero vineyards. Since the death of Pasquale in 2007, daughter Ornella has carried on the family tradition, doing everything on her own in the vineyards and cellar, her sole innovation being the acquisition of a temperature-controlled fermentation tank. Their Bricco San Giuliano Barbaresco comes from an 8-hectare parcel at about 400 meters above seal level and is aged exclusively in large botte, whereas the Dolcetto, with its plum fruit and intriguing hints of flint and smoke, is aged in stainless steel. The wines take seven months to settle, mature and express the very best characteristics of their vineyards of origin. The wines are then carefully assembled in the “magical ritual” that creates the cuvée. Only after aging on the lees for at least 2 years will this Franciacorta express all its richness and identity. The family had long owned an historic restaurant in Sondrio at the gateway to the Valtellina in far northern Italy, in the foothills of the Dolomites in Lombardy, for which they made some house wines from the local Nebbiolo (here called Chiavennasca) and reserve wines made from the famous villages of the secluded Valtellina: Sassella, Grumello and Inferno. The grandfather, Mamete, made wine from local grapes for his restaurant customers, taking advantage of crotti, the natural caves found throughout the region and which provide ideal cellar conditions. This eventually grew into a separate business, today run by winemaker and grandson Mamete Prevostini, who has become renowned for the silky, elegant Nebbioli he has been producing on his own since 1995.

They capture the perfumed, silky-textured character of Nebbiolo with great transparency, and are among the most sophisticated wines we have tasted from the region. Additionally, the cellar was built to be 100% carbon neutral. The winery was founded in 1980 by three friends, Giambattista Cilia, Giusto Occhipinti, and Cirino Strano. The initials of their last names form the winery’s name.

The winery itself dates back to the 1880’s during a period in which there was huge demand for Sicilian wines. Phylloxera had already devastated many of the world’s top wine growing regions but it had not yet reached the island. Sicily has a long history of winemaking, dating back to the 8th century BCE when the Greeks first planted grapes in the eastern part of the Island. It is only more recently though that true top quality wines and winemaking have arrived there. It was through the hard work and dedication of producers such as COS who showed the potential of Sicily’s terroir and drew attention to the island, especially its ability to produce complex, pure and fresh wines, despite its location at the very southern tip of Italy.

This freshness and balance are helped by the soils in the Vittoria region which are blessed with limestone substrates under 1-2 feet of red clay. For Giusto, “the vineyard is like our life’s savings in the bank, so we must protect it.” Protecting it means that they work organically and biodynamically in order to support the health of the soil. In fact, they have never used any synthetic or chemical additives in the vineyard since the outset in 1980. Officially, the winery was an early practitioner of Biodynamic viticulture starting in 2000, and were certified (Organic) as of 2007. The climate of Vittoria is also generally warm and dry making it well-adapted to organic & biodynamic viticulture. Giusto and his vineyard team also prepare many of the Biodynamic treatments in house, though a few are purchased elsewhere from small, reputable sources for these important products.

As a goal, Giusto seeks to have the transparency of the soil conveyed into the wines themselves. To that end, he did extensive research on aging vessels and eventually decided on a combination of 440-liter clay amphorae sourced from Spain along with a collection of large neutral botti and also concrete tanks (latter mostly for the Frappato). The clay is porous like oak but has the advantage that it imparts less flavor to the wine than does even large, old casks. All aging at the winery is done in one of these vessels. Stainless steel is only used for assembling the wine prior to bottling. For many of the wines, the juice remains in contact with the skins for extended periods, even for whites. Giusto feels these extended macerations help the wine obtain natural preservatives which in turn allows them do the aging and élévage with little or no added Sulphur until the bottling when there is only a small addition.

Among the wines, COS is probably best known for their Cerasuolo di Vittorio, but also equally for their Pithos Rosso which is basically a Cerasuolo di Vittoria aged exclusively in amphora instead of oak. He also makes a single-vineyard Cerasuolo from his top cru, called Della Fontana. On the white side, they are also known for their Pithos Bianco, made from the Grecanico grape, a local variety of Garganega (of Soave fame), aged and fermented in amphora. Throughout the entire range there is a focus on elegance and purity, especially the joyous, floral Frappato – Sicily’s answer to Cru Beaujolais – and the spicy, fruit-forward Nero di Lupo (Nero D’Avola).

//cdn.shopify.com/s/files/1/0804/6785/3601/files/5_82d77f3a-9edf-435a-9a15-572aec4a7417.png?v=1774910515
michele-satta-bolgheri-rosso-doc
2019 Michele Satta, Bolgheri Rosso DOC, Tuscany, Italy

ABOUT THIS WINE

All the grapes are cultivated with traditionally and with care, in a high density vineyard (about 6,000 plants/ha) where the winemaker particularly respects the natural balance.
