Germanic monks obtained the estate during the collapse of Rome, and the first written evidence of winemaking comes from 470 A.D. Nikolaihof has been practicing Bio-dynamics since 1971, making them one of the longest Bio-dynamic practicing wineries in the world. Nikoliahof became Demeter certified Bio-dynamic in 1998. Some say that a slightly higher percentage of sand and pebbles in the Montlouis soils makes the wines a bit leaner than the wines of Vouvray. For us, this trait adds to the charm of Montlouis's sec wines, giving them a lively crispness on the palate and outstanding minerality.\u003c\/p\u003e\n\u003cp\u003eFrançois Chidaine worked alongside his father Yves for many years before setting out on his own in 1989. Convinced of the potential of the teroirs of Montlouis and Vouvray, he purchased assorted parcels and expanded the estate to today's total of 30 hectares of Chenin Blanc, many of which are dominated by old vines of 40 to 80 years of age. During these years of growth, Chidaine earned a reputation as a leading natural viticulturalistin the region. Today, he is devoted to what is referred to in the U.S. as \"regenerative agrcitulture\", which involves implementing practices that are known to improve the rate at which CO2 is removed from the atmosphere and converted into plant material and soil organic matter (squestering CO2 in the soils). At the heart of this approach is a practice of \"no-till\" farming. While plowing is an integral part of natural viticulture for many farmers and producers, this disruption of the soil is thought to interfere with the complex\u003cspan\u003e \u003c\/span\u003e\u003cem\u003emycorrhizal network\u003c\/em\u003e\u003cspan\u003e \u003c\/span\u003e(funghi network) that actually connects individual plants together and transfers water, carbon, nitrogen and other nutrients and minerals between them. After years of working his soils, François developed a belief that by plowing he was sabotaging these important communication networks which help to give the vines what they need to flourish. An essential asopect of regenerative farming is the establishment of permanent cover crops between vine rows. Francois encourages biodiversity by embracing the growth of indigenous plants and sowing over 25 additional species among the vines. By mimicking nature, the vines find their place in a complex ecosystem, allowing them to better express their place of origin.\u003c\/p\u003e\n\u003cp\u003eThis progressive vision isn't simply about growing the best grapes possible, but rather a vision for the future. In François' words, \"this is how we save the world\" (not to mention other proponents, of course). It is estimated that as much as one-third of the surplus CO2 in the atmosphere that is causing climate change has come from agricultural and land management practices. Through organic and biodynamic farming, Francois never saw the results that he is now seeing in his soils and vineyards. But he admits that he is thankful he took those paths since they led him here, and he hopes others will join him.\u003c\/p\u003e\n\u003cp\u003eAt the Domaine, François is a true champion of the Chenin Blanc grape and touts its ability to produce vibrant wines that age gracefully. Rías Baixas is comprised of 5 non-contiguous subzones that give a wide spectrum and rich tapestry of terroir to Albariño, which is a grape that is known for showing its provenance very clearly. In the case of Columna, we find ourselves in Condado de Tea, on the banks of the Miño river, inland from the coast and just above the border with Portugal. As the warmest subzone, Condado de Tea produces wines that showcase more generous fruit and ample body than those from the coast. Alberto Orte makes this wine with Rodri Méndez, from vineyards planted in the mid to late 70s in granite soils. Both winemakers share a philosophy of thoughtful winemaking, and Columna is painstakingly handmade from harvest to bottle, using ambient yeast fermentation. After picking and a strict selection, the fruit is crushed in the press and maceration is done inside the press. The length of the maceration depends on the vintage, but also on the vineyard and the quality of the fruit. Bernhard uses closed pneumatic presses and has several different sizes. “This is how the press used to operate – there was only one pressing per day, so there was a maceration in the press,” explains Bernhard. The juice is “browned” and racked into stainless steel or Stockinger fuder where it is fermented by native yeasts without temperature control. Minimal amounts of sulfur are used at harvest and bottling and the cellar is very cold, inhibiting the development of malolactic. The single vineyard wines from the three Erste Lagen – Rosenberg, Spiegel, and Stein – are on the full less until June or July before racking and bottling. Bernhard Ott is of the fourth generation and has managed the winery since 1993 when he took the helm from his father. When he came home to the winery as a 21-year-old, he was interested in producing wines of the highest quality. Bernhard wanted to prove that elegant and long-lived wines could be produced from Grüner Veltliner grown on loess soil, specifically from Rosenberg vineyard. Bernhard replaced the old wooden casks with stainless steel and began working the vineyards with an aim for the highest high quality. In 2018, nearly 30 years after taking over and switching all vinification and élevage to steel, Bernhard began working with varying sizes of Stockinger fuders.\u003c\/p\u003e\n\u003cp\u003eIn 2004 Bernhard began composting, using organic cow manure from a friend in the region. In the past four years, he’s used so much manure that the EU contacted him; “they didn’t think it was possible to use 100,000 Euros worth of manure – they thought there was some accounting mistake. In 2006 he took a trip to the legendary biodynamic property Domaine La Romanée Conti in Vosne, with his best friend, Hans Reisetbauer. There, after a marathon tasting in the cellars with Aubert de Villaine, Bernhard committed to move to biodynamic viticulture. In 2007, with Johannes Hirsch, Fred Loimer, and a group of like-minded producers, Respekt was formed. In 2014, after a very difficult harvest in which Bernhard didn’t bottle any single vineyard wines, he decided to work whole cluster saying “the stem is part of the grape. If you work without stems, you get more sweetness, more round fruit.”\u003c\/p\u003e\n\u003cp\u003eToday, Bernhard is looking back to previous generations for inspiration and to inform both his work in the vineyard and in the cellar. Grapes are picked at full ripeness, but thanks to biodynamic farming and composting, the sugar ripeness stays very moderate. “The compost helps with water regulation. Healthy soils give water when the weather is dry and take it back when there is too much. This also means no irrigation at all.” says Bernhard.
