The winemaker, Mamuka Khurtsidze, is an environmentalist and geographer who has dedicated his life to preserving Georgia heritage for the past 40 years. In 2011, indigenous grapes were planted on the 20-hectare estate and in 2017 the traditional ‘Qvevri’ were added to the winery for the aging of all wines. These large traditional clay vessels, Qvevri, (typically around 800 liters) are made by hand with clay and then buried underground to provide a stable temperature for aging both the red and amber wines.\u003c\/p\u003e\n\u003cp\u003eGeorgia is the birth place for the ‘orange’ or the amber wine style, which is gaining in popularity throughout the world. It was Italian producers from Friuli visiting Georgia and utilizing these technics which really sparked interest in this authentic style. The other half of this exciting new project is Anna Addison, an art director and designer who specializes in wine and spirit brands and is based out of Amsterdam. She is integral in closing the gap between this relatively undiscovered region of the world and the adventurous wine consumer. She brings the beautiful style to the production and look of Nine Oaks, as well as an infectious love and passion for these traditional wines. Starting with just over 1 hectare of rented vines, Aurélien has steadily built up a domaine of almost 10 hectares by purchasing, bartering, and replanting vineyards around the town of Saint-Pierre-de-Boeuf at the Northern extreme of the Saint Joseph appellation. The vineyards are predominantly granite, and very steep. Francoise’s grandparents owned just 2 hectares of vines in the early 1940’s along with animals and cereals. Winemaking was something that was done for family and local consumption. All of that changed on August 11, 1944 when Francoise’s grandfather, Maurice, was killed by Nazi soldiers after being caught trying to blow up some train tracks. His young son, Francoise’s father, was suddenly in charge and in an effort to keep the family afloat, converted all of the land into vineyards. The rest, as they say, is history. DOMAINE DU VIKING Most of Lionel and Francoise’s 13 hectares are not on the famous chalk (tuffeau) soils that make up over 90% of Vouvray but on the hard silex soils of the northern tip of the appellation. This silex produces crisp, mineral, and long-aging Vouvrays that bring to mind great Riesling. The style chez Le Viking (as he refers to himself with only a small degree of irony) is called sec tendre. This “tender dry” style allows for the sugar levels of a demi-sec but with the acidity level of a great Sancerre or Chablis. It is currently managed by the seventh generation, brothers Francois and Antoine Roland-Billecart. The cellars are in the hands of renowned \"chef de cave\" Francois Domi.\u003c\/p\u003e\n\u003cp\u003eBillecart-Salmon owns a total of 15 hectares of vineyards. Eleven of these are in the Vallee de la Marne split between 4ha of Grand Cru in Ay and Premier Cru in Mareuil-sur-Ay and 7ha in the village of Damery. In the Cote des Blancs the family owns 4ha of Grand Cru vineyards in the villages of Chouilly, Avize and Le Mesnil-sur-Oger. With respect to harvest one of the most distinctive aspects of Billecart-Salmon is their philosophy that an early harvest yields more elegant and delicate champagnes. They look for a strong acid structure rather than alcohol as a preservative and therefore, never harvest at higher than 10 degrees of potential alcohol.\u003c\/p\u003e\n\u003cp\u003eAnother defining characteristic of Billecart-Salmon is their practice of double cold settling which they began in 1952. This involves a primary cold settling of the pressed juice for a period of 12 hours whereby the heaviest of the must solids fall to the bottom. The juice is then racked into clean tanks where it is chilled down to 2C for another 48 hours. This second and much colder settling eliminates any wild yeasts and additional heavy elements without the use of enzymes, filtering or a centrifuge. After the second racking, fermentation is initiated by adding dried yeasts and maintained at a long slow pace for up to 5 weeks in order to preserve as many delicate fruit aromas as possible. One varietal that benefits greatly from this is Pinot Meunier which the Billecarts believe is a vital component in world class champagnes. Many producers shy away from Meunier because it is easy to burn off its delicate aromas during fermentation. Malolactic fermentation is allowed to occur but may be blocked in certain years if the vintage conditions warrant it. Since 1987 the family has been making a certain percentage of the wines for their vintage cuvee champagnes in barrel. In these instances malolactic fermentation is always blocked.\u003c\/p\u003e\n\u003cp\u003eAs of 2001, Billecart-Salmon moved their winemaking into a brand new facility that they believe to be the most technically advanced in Champagne. The intricate and precise nature of Francois Domi's winemaking demanded that the family use every available resource to create the perfect environment for the production of these truly stellar champagnes. The ability to perform as many as 75 micro-fermentations simultaneously allows M. Domi the luxury of keeping many of his parcels separate until the blending phase. Stéphane’s hard work has transformed the quality of the grapes. With such good quality fruit, vinifications are relatively easy and require very little intervention. Natural yeasts are used in fermentation and a very small amount of sulphites are added, nothing else. The end result is an excellent expression of terroir with intense aromas.
