The area is known for long lees aging — a process by which a wine gains texture and body, and often a good deal of salinity — but Eladio takes it up several notches. He’s a born experimenter, but instead of a laboratory, he performs his wizardry in the vines and in the cellar.\u003c\/p\u003e\n\u003cp\u003eHis holdings are located in the Salnes Valley, and he’s been growing Albariño since before the Rias Baixas appellation was officially declared.
