The soil profile of these vineyards includes layers of clay marl alternating with sandstone flysch. Grapes are hand harvested at the beginning of September. Grapes complete whole cluster crushing and soft pressing. Cold stabilization is done just by gravity. Juice is fermented in stainless steel tanks and partly in oak barrels, where the wine remains for about 10 months. Partial Malolactic fermentation followed by agent clarification post blending. The area’s excellent sun exposure, marked temperature variation, and mineral-rich soils create ideal conditions for producing high-quality wines. After early collaborations with local wineries, they pursued their own venture by acquiring a cellar and 10.5 hectares of vineyards on Monte Quarin, founding Due del Monte.
