The grapes and musts are purchased from supply partners, according to rigorous specifications. Harvesting is done both by hand and with a grape harvester. The grapes are pressed with a pneumatic press. After settling the juices ferments for 2\/3 in stainless steel vats and for 1\/3 in 500 litre oak barrels. Aging is completed over 6 to 10 months.\u003c\/p\u003e\n\u003cp\u003eThroughout the aging process, decisions are taken only after careful tasting evaluation. The data obtained is completed through technical analysis. Today, its estate holdings span roughly 100 hectares throughout Burgundy, from Chablis through the Côte de Nuits and Côte de Beaune to the Côte Chalonnaise and Mâconnais.
