The grapes come from the Monti Garbi district of Mezzane di Sotto, in eastern Valpolicella, where vineyards sit around 300 meters above sea level on sandy, silty soils rich in limestone. After a controlled-temperature fermentation, the young Valpolicella is refermented on the skins left from Amarone production—a traditional technique that adds depth, texture and complexity.\u003c\/p\u003e\n\u003cp style=\"color: #666666;\"\u003eThe wine is aged for 12 months in 500-liter French oak casks, 30% new and 70% previously used. Ruby red in color, it offers aromas of red fruit and ripe cherry. The palate is soft and enveloping yet fresh and savory, with well-presented tannins and a lingering spicy finish. At 14% ABV, it pairs naturally with meat ragù, grilled or roasted meats, hearty pasta dishes and medium-aged hard cheeses.
