The vineyard is organically certified, with the vines harvested by hand. In the cellar, the grapes undergo a natural fermentation and are aged for approximately 14 to 16 months in 228- and 350-liter oak barrels, with 40–50% new oak. The wine is neither fined nor filtered, allowing the character of the fruit and vineyard to remain at the forefront.
