South-facing exposure and clay-limestone soils, with an abundance of limestone stones, provide both ripeness and mineral tension. The vineyard is organically certified and harvested by hand. In the cellar, the wine spends 12 to 14 months in 228- and 350-liter oak barrels, approximately 30–50% of which are new, and it is bottled without filtration.
