Abondance, cow's milk, Savoie, France, 0.5lb/Cut

Abondance PDO, a cheese originating from the Haute Savoie department in the Auvergne-Rhône-Alpes region of Southeastern France, has been made traditionally since the 12th century. Exclusively produced from unpasteurized cow's milk, this cheese received the esteemed PDO (AOC) designation in 1990.

Abondance de Savoie is pressed, brine-soaked & aged, during which time it is rubbed with salt. This cheese may replace or combine mountain cheeses such as Comte or Gruyere for melting purposes to add extra dimensions of flavor.

The handcrafted wheel-shaped cheese exudes a robust aroma and boasts an intensely fruity, buttery, and hazelnut flavour profile. With a minimum maturation period of 3 months, the cheese develops a fine, nutty taste and a melt-in-the-mouth texture.
