For this cuvée, the importer describes native-yeast fermentation in stainless steel followed by maturation in French oak barrels that are one to three years old, with bottling without fining or filtration. Used barrels allow the wine to develop texture while keeping the vineyard’s character at the center.\u003c\/p\u003e\n\u003cp\u003eThis 2024 bottling is an opportunity to explore Chardonnay from a Côte de Nuits village more commonly encountered through its reds. He purchased the former Domaine Graillet in Morey-Saint-Denis and renamed it Dujac, a contraction of “du Jacques.” Rosalind Seysses became central to the estate, and their sons Jeremy and Alec, together with Jeremy’s wife Diana, now continue its work.\u003c\/p\u003e\n\u003cp\u003eThe domaine began organic trials in 2001, extended them across its vineyards by 2008 and received certification in 2011. Biodynamic practices complement plowing, organic compost and considerable manual vineyard work.
