They are  known for their deep library of traditional soleras and their close involvement in the winemaking process, from vineyard sourcing through cellar aging and bottling.\u003c\/p\u003e\n\u003cp\u003eThe Amontillado’s aging takes place in Mil Pesetas, a cellar within an eighteenth-century complex in the historic San Blas neighborhood. Barbadillo began oxidative ageing Amontillado there in 1920.
