ABOUT THE WINE

Plénitude 2 is a later expression of Dom Pérignon’s 2008 vintage, released after approximately fifteen years of cellar maturation. The extended time on the lees is central to the house’s approach: selected bottles are held back to reach a further stage of expression rather than being released with the original vintage bottling.

The 2008 P2 combines citrus and white-flower aromas with roasted almond and brioche. Candied lemon and white peach develop into cocoa and roasted-coffee notes, with a subtle saline accent. A powerful yet supple structure balances refreshing acidity and creamy texture, leading to a long finish marked by refined bitterness.

ABOUT THE PRODUCER

Dom Pérignon produces vintage Champagne, with each wine reflecting a single harvest. The house takes its name and inspiration from the Benedictine monk Dom Pierre Pérignon of Hautvillers. Its approach joins the character of the growing season with patient maturation on the lees.

The successive release stages, called Plénitudes, explore how the same vintage changes over time. Under cellar master Vincent Chaperon, this emphasis on vintage, maturation and the distinct expressions of white and rosé Champagne remains central to the house’s work.
