78% Cabernet Sauvignon, 17% Merlot, and 5% Cabernet Franc

The grapes for Le Petit Mouton come from the younger vines of Château Mouton Rothschild’s Pauillac vineyards; these are selected separately from the oldest vines reserved for the grand-vin. 

For the 2015 vintage, harvest spanned from September 14 to October 6, reflecting careful timing to pick each plot and variety at optimal maturity given variable ripening across parcels. 

After hand-picking (in small, open baskets) and gentle transport, the destemmed grapes are hand-sorted before being transferred — by gravity (no pumping) — into vats for fermentation. 

Fermentation (and subsequent maceration) proceeds in oak vats (some stainless-steel), and maceration typically lasts 15–25 days for this estate, which helps extract colour, tannin and structure while preserving finesse. Fermentation and maceration conclude, the wine is matured in French oak barrels — for the second wine, a portion sees new oak, though less aggressively toasted than in earlier decades at Mouton.
