“Unicus” is crafted from the native Hondarrabi Zuri grape grown on steep, Atlantic-facing slopes in the Getariako Txakolina appellation of the Basque Country. The 2016 vintage offered ideal ripening conditions balanced by cooling ocean breezes, preserving the grape’s natural acidity and saline character.
Produced using the traditional method with secondary fermentation in bottle, the wine spends several years aging on its lees before disgorgement, developing subtle notes of brioche and almond while maintaining the crisp citrus and mineral backbone typical of the region. Bottled as Brut Nature with no dosage, the wine is dry, focused, and intensely terroir-driven.
