ABOUT THE WINE
Denis Salomon’s “Terre Amoureuse” is a vintage-dated Blanc de Noirs Extra Brut, crafted entirely from Pinot Noir, hand-harvested from chalk and limestone-rich soils in the Aube, near Les Riceys in southern Champagne. The 2017 vintage showcases this terroir's distinctive tension and ripe structure. Fermentation occurs with native yeasts, and the wine undergoes extended aging on lees before disgorgement.
The dosage is kept low—Extra Brut (typically <3g/L)—highlighting the wine’s purity and dry, saline character. Aromatically, it opens with redcurrant, pomegranate, and subtle spice, evolving into notes of almond, brioche, and chalk with air. On the palate, it’s structured and precise, with a fine bead and firm acidity, making it both energetic and gastronomic.
Ideal as an aperitif or paired with tuna crudo, Comté, roast quail, or mushroom tarts. It can also age beautifully over the next 5–7 years, gaining richness and depth.

In the cellar, his approach is traditional yet non-interventionist, allowing spontaneous fermentations and favoring long élevage to build complexity. The house style is defined by low dosage, long lees aging, and single-varietal bottlings, offering transparency and finesse over opulence.
