Le Jardin d’Ulysse is a multi-parcel cuvée composed of roughly 60% Pinot Noir and 40% Chardonnay, sourced from several organically farmed sites in the Côteaux du Petit Morin. The 2017 base vintage is complemented by reserve wines held in barrel, adding complexity and richness to the final blend. Fermentation and aging occur entirely in oak barrels with native yeasts, and the wine is bottled with minimal dosage as Extra Brut.
The result is a Champagne that balances richness and tension, with aromas of golden apple, orange peel, marzipan, and chalk. On the palate, it's textured and detailed, with a creamy mousse and a firm mineral spine.
