Crafted entirely from Chardonnay grown on the cool southeastern slopes of the Simonsberg in Paarl, the 2019 Sprankel is a traditional-method sparkling wine that exemplifies Babylonstoren’s meticulous approach. Whole bunch-pressed and fermented in stainless steel, the base wine undergoes secondary fermentation in bottle and is matured on the lees for five years, imparting brioche, hazelnut, and baked apple complexity. A whisper of autolytic richness supports a taut, citrus-driven core, with a mineral backbone drawn from decomposed granite soils.
