Crafted entirely from Chardonnay grown on the cool southeastern slopes of the Simonsberg in Paarl, the 2019 Sprankel is a traditional-method sparkling wine that exemplifies Babylonstoren’s meticulous approach. Whole bunch-pressed and fermented in stainless steel, the base wine undergoes secondary fermentation in bottle and is matured on the lees for five years, imparting brioche, hazelnut, and baked apple complexity. A whisper of autolytic richness supports a taut, citrus-driven core, with a mineral backbone drawn from decomposed granite soils. This wine reflects a commitment to precision viticulture, dry farming, and minimal intervention, yielding a bottle-fermented sparkling wine of notable refinement. Perfect as an apéritif, it also pairs beautifully with oysters, lightly smoked trout, or goat’s cheese tart.
