ABOUT THIS WINE

Cappellano's Barolo Chinato is based on aged Barolo made from 100% Nebbiolo grown in the prestigious Gabutti vineyard in Serralunga d’Alba. To this, the family adds a secret infusion of over 20 herbs and spices—believed to include cinchona (quinine), cardamom, cinnamon, rhubarb root, and other botanicals—following a 19th-century recipe created by Giuseppe Cappellano, who is credited as the originator of Barolo Chinato.

The base wine undergoes maceration with the botanicals and is gently fortified and sweetened, resulting in a balanced and deeply aromatic elixir. The 2018 version offers remarkable integration between the wine’s structure and the infusion’s complex bitterness and spice.

Best served slightly chilled or at cellar temperature as a digestif, or paired with dark chocolate, spiced desserts, or sharp cheeses.
