ABOUT THIS WINE
Soft pressing of whole grapes not destemmed fermentation in steel at a temperature of 18 - 20 degrees with indigenous yeasts, later after a racking, the batonnage technique is applied. In early February we pressed the Garganega grapes for recioto, a part of the must obtained is added to this wine. The mass thus obtained after a short reassembly comes bottled. In bottles lying down occurs the second fermentation.
ABOUT THIS PRODUCER
We took over this estate from the Pavonian Fathers, who bought it from the Giovanelli Princes. The property covers 30 hectares of which 8.5 are planted with vineyards and the remaining 20 are occupied by the park and houses. The cultivated varieties are: Cabernet, Merlot, Malvasia, Garganega Chardonnay and Sauvignon. Working naturally in this evocative environment is a must and charges us with a great responsibility, but we are convinced that with passion (and a little unconsciousness) we can do great things.
