ABOUT THE WINE
Produced entirely from Chardonnay, this Bourgogne Blanc reflects Arnaud Ente’s philosophy that regional wines deserve the same meticulous attention as his more prestigious village and Premier Cru bottlings. The domaine is based in Meursault and works on an exceptionally small scale, with low yields and rigorous vineyard management contributing unusual concentration and detail even at the Bourgogne level.
The 2020 growing season was hot and dry, with relatively little disease pressure. Some parcels experienced water stress, and the domaine responded through careful vineyard management. Harvest began remarkably early, on August 17, as Ente sought to capture the fruit at the intersection of maturity and freshness. The resulting wines combined ripeness with the tension, energy, and transparency that define his modern style.
The Bourgogne Chardonnay is especially expressive in 2020. Apple blossom, spring flowers, fresh citrus, and orchard fruit form the aromatic core, with subtle almond and mineral nuances adding complexity. The palate offers greater ripeness and concentration, even suggesting a touch of pineapple, but remains firmly anchored by fresh apple and lemon. A yield of 44 hl/ha was reported for the vintage, and the wine's persistence and detail place it well beyond the expectations of a typical regional Bourgogne.
Ente’s approach in the cellar emphasizes transparency rather than obvious élevage. Fruit is generally whole-cluster pressed, and oak influence is deliberately restrained. During this period, the domaine increasingly incorporated large foudres and glass Wineglobes into élevage, seeking purity and minimal interference between vineyard and finished wine. The result is Chardonnay with texture and concentration but little overt wood character.
The 2020 has the balance and concentration to evolve beautifully, though it is already compelling for its combination of fruit and mineral energy. Serve around 12–14°C with scallops, grilled prawns, lobster, simply prepared fish, roast chicken, veal, creamy mushroom dishes, or Comté.
ABOUT THE PRODUCER
Arnaud Ente established his domaine in Meursault after beginning work with his wife Marie-Odile’s family vineyards around 1990 and taking control of the estate in the early 1990s. From a tiny holding of roughly four hectares, the couple developed one of Burgundy’s most exacting domaines, earning an international reputation for Chardonnay of exceptional precision, purity, and balance.
The domaine is certified organic and operates with an unusually high level of manual attention per hectare. Ente encourages cover crops, avoids synthetic chemicals and intrusive cultivation, employs Guyot-Poussard pruning to promote healthy sap flow, and keeps yields deliberately modest. Harvesting is by hand and generally on the early side, with rigorous sorting used to retain acidity and capture a precise expression of each vineyard.
Ente’s winemaking has evolved steadily toward greater transparency. Barriques gradually gave way to larger-format wood and ultimately Wineglobes, reducing the influence of oak and oxygen during élevage. The objective is not richness for its own sake but clarity: wines with tension, energy, concentration, and an unusually direct connection to their vineyards. That philosophy extends throughout the range, making the Bourgogne Chardonnay a particularly compelling introduction to one of Meursault’s most meticulous producers.
