Toni Carbó and Agustí Torelló (AT Roca) wanted to focus on expressing the unique identity of Penedès and work with sustainable, organic viticulture. So they embraced the Classic Penedès designation to reflect their commitment to quality, terroir, and transparency.

So, while it’s made just like a Cava Reserva (or even better), AT Roca’s sparkling wines are labeled Classic Penedès to make a point: origin and farming matter.

On the nose, it presents aromas of sweet green apples, pears, and a delicate hint of fennel, complemented by subtle notes of fresh patisserie and brioche. The palate is intense and fresh, featuring a creamy texture and a delicious, refreshing acidity, leading to a long, enticing finish.

ABOUT THE WINE

Crafted from a blend of 55% Macabeu and 45% Xarel·lo, this organic sparkling wine originates from vines over 30 years old, cultivated across 32 distinct plots in the heart of Penedès. The vineyards are managed organically, emphasizing sustainability and a deep connection to the terroir. Following the traditional method, the wine undergoes secondary fermentation in the bottle and is aged on its lees for a minimum of 20 months, enhancing its complexity and depth. The result is a sparkling wine that beautifully reflects its heritage, offering a harmonious balance of fruit, minerality, and subtle autolytic notes. This versatile wine pairs excellently with a variety of dishes, including baked whitefish, grilled poultry, and rice dishes with seafood.
