ABOUT THIS WINE
100% Aligoté from old plots located in the town of Saint-Bris, at an altitude of between 210 and 250 m, at an orientation of East and South-West. The soils here are clay-limestone and date from the Kimmeridgien.
Harvest is completed by hand, and whole bunches are pressed with a pneumatic press. Fermentation is done under the action of indigenous yeasts and vinification without input in oak vats. The winemakers use slight static cold settling. Finally, the wine is aged for 12 to 18 months in vats.

Athénaïs de Béru’s work extends beyond Château de Béru through a small négociant range made with fruit from neighboring Yonne vineyards. Partnerships with growers working organically or biodynamically allow her to explore sites outside the family’s Chablis holdings.
Her philosophy favors an authentic expression of place and creative freedom in the cellar. Native fermentation and limited intervention connect the purchased-grape wines with the same attention to living soils and vineyard character that guides the domaine.
