ABOUT THE WINE
“Pie Rupestris” refers to the ungrafted rootstock of the Nebbiolo vines planted in the Gabutti cru of Serralunga d’Alba—one of Barolo’s most powerful and age-worthy terroirs. The 2020 vintage was vinified in accordance with Cappellano’s steadfast philosophy: spontaneous fermentation in large Slavonian oak casks, extended maceration lasting up to 30 days, and aging in neutral botti for 18–24 months. There is no fining, filtration, or use of new oak. The wine emerges aromatically lifted—dried rose, chinotto, red currant, worn leather—yet firmly anchored by sinewy tannins and a mineral core. Long and meditative, it is a wine for those who embrace nuance and patience. Pair with truffle risotto, game birds, or mature cheeses, and cellar confidently for 15–25 years.
