2020 Château Cabezac "La Tradition", Minervois, South West, France
The deep red colored robe features purple reflections. The nose at first marked by notes of spices and pepper then opens up to reveal aromas of red fruits. The palate is suave, round and full with hints of rosemary and licorice, and is typical of the Minervois.
ABOUT THIS WINE
A blend of Syrah, Grenache, and Carignan, this cuvée represents the traditional know-how of the Minervois. These grape varieties, emblematic of the appellation, blend together to result in a generous and accessible red wine.
The soils are made of recent river alluvium. This plot benefits from a substantial deposit of pebbles guaranteeing good drainage. It can be used to produce excellent low yield reds. The soil needs careful monitoring of organic and mineral content to avoid any sudden droughts and to maintain productivity.
After being picked, the grapes are de-stemmed and crushed. The vinification and the maceration last between 15 and 20 days. A 'soft' extraction is performed by a gentle pumping over daily.
ABOUT THIS PRODUCER
