ABOUT THE WINE

Crafted from a blend of Corvina, Corvinone, and Rondinella grapes, the 2021 Corte Volponi Valpolicella Ripasso Superiore is a fine expression of the traditional Ripasso technique, where young Valpolicella is refermented on the skins of Amarone, imparting added complexity and body. The wine opens with aromas of dried red berries, sweet spices, and hints of leather, followed by a palate that balances dried cherry, fig, and clove with savory herbal undertones. Aged for over a year in large Slavonian oak casks, it develops supple tannins and a warming texture without sacrificing freshness. Grapes are hand-harvested from hillside vineyards in the Valpantena valley, an area prized for its limestone-rich soils and excellent drainage. Sustainable vineyard practices emphasize canopy management and minimal intervention, preserving both the purity of fruit and the health of the land. This Ripasso is a versatile food companion, pairing beautifully with braised meats, aged cheeses, and wild mushroom risotto.
