The “Les Cognées” vineyard is located in the heart of the Morey-Saint-Denis appellation, with vines planted on the region’s famous limestone-rich soils. The grapes were hand-harvested in early September, ensuring optimal ripeness. The wine was fermented in small batches with indigenous yeasts in temperature-controlled stainless steel. It was then aged for 14 months in French oak barrels, of which 20% were new, to add structure and depth without overpowering the purity of the fruit. The wine was bottled without fining or filtration to preserve its natural expression.
