“Les Lavières” is a Premier Cru site in Savigny-lès-Beaune named for its stony, shallow soils layered with flat limestone slabs (lavières), which impart a signature linearity and tension to the wines. Domaine Tollot-Beaut, based in Chorey-lès-Beaune, farms this parcel with lutte raisonnée practices—prioritizing sustainability while allowing measured treatments as needed.
