ABOUT THE WINE
Sourced from organically farmed vines on the marl and sandstone slopes of Goriška Brda, this Sauvignon Blanc is made with minimal intervention to let the terroir speak. After hand-harvest, the grapes are gently pressed and fermented with native yeasts in large oak casks, where the wine remains on its lees for added depth and complexity. Unlike many New World counterparts, this Sauvignon shows restrained varietal character in favor of texture and earth. Notes of grapefruit pith, wild herbs, crushed stone, and a whisper of smoke unfurl with air. The structure is firm yet elegant, with bright acidity and a dry, savory finish. Ideal with grilled seafood, asparagus risotto, or aged goat cheese.
