Fanny Sabre’s 2022 Bourgogne Blanc is made from 100% Chardonnay, sourced from organically tended vines near Pommard and Beaune. The soils here—rich in limestone and clay—impart tension, lift, and a refined mineral backbone. Fermented with indigenous yeasts and aged in neutral oak barrels, the wine retains purity while gaining texture and complexity.

Fanny Sabre is a rising star of natural Burgundy, producing small-batch wines from some of the Côte de Beaune’s most revered villages. After inheriting the estate as a young woman, Fanny quickly made a name for herself through her commitment to organic farming, low-intervention winemaking, and a personal, hands-on approach to each cuvée.

Working in her cellar in the heart of Beaune, she vinifies using native yeasts, neutral barrels, and minimal sulfur—seeking elegance, drinkability, and purity of place. Her wines are known for their gentle texture, clarity, and quiet sophistication.
