ABOUT THE WINE
Domaine Simon Bize farms a tiny 0.32-hectare parcel within Latricières-Chambertin Grand Cru, located immediately south of Chambertin on shallow limestone and marl soils. This cooler, rockier section of the Côte de Nuits consistently produces Pinot Noir of remarkable aromatic lift, tension, and mineral precision, distinguishing Latricières as one of Burgundy's most elegant Grand Crus.
Produced from 100% Pinot Noir, the 2021 vintage reflects both the freshness of the growing season and the domaine's unwavering commitment to traditional Burgundian winemaking. The grapes are harvested entirely by hand and fermented with a high proportion of whole clusters, a hallmark of Domaine Simon Bize that enhances perfume, structural complexity, and aging potential. Gentle extraction preserves the purity of the fruit, while maturation in French oak barrels—with a restrained percentage of new oak—adds texture without masking the vineyard's distinctive character.
