“Metis” is the result of a decade-long collaboration between Klein Constantia and famed Sancerre vigneron Pascal Jolivet, aimed at crafting a terroir-driven Sauvignon Blanc with European sensibility and South African soul. The 2022 vintage reflects cool oceanic influences and granite-rich soils of the Constantia hillsides, fermented using only wild yeasts and aged on fine lees in large neutral foudres for complexity and texture.

Aromatically subtle yet layered, the wine offers hints of lime leaf, gunflint, and fresh herbs. The palate is restrained, with tension and energy driving flavors of lemon pith, saline minerality, and green apple skin. This is a cerebral, gastronomic Sauvignon Blanc—built for pairing with delicate seafood, poached white fish, or dishes like asparagus with beurre blanc.
