ABOUT THIS WINE
This wine is a Rose of Pinot Noir made in the Methode Ancestrale tradition from the Topotero Vineyard, located in Avila Beach in San Luis Obispo County. The vineyard is farmed practicing organic on a home ranch just over a mile from the Pacific Ocean. The wine was whole cluster pressed and then fermented in neutral french oak barrels with native yeast. The wine was bottled at the very end of fermentation to capture the natural bubbles in the bottle. The wine aged on lees in bottle before being riddled, disgorged, corked and caged, all by hand.
Pairs beautifully with a range of dishes, including grilled salmon, roasted chicken with herbs, summer salads with fresh berries, goat cheese and prosciutto crostini, and strawberry shortcake for a delightful dessert pairing.
