This wine is a Rose of Pinot Noir made in the Methode Ancestrale tradition from the Topotero Vineyard, located in Avila Beach in San Luis Obispo County. The vineyard is farmed practicing organic on a home ranch just over a mile from the Pacific Ocean. The wine was whole cluster pressed and then fermented in neutral french oak barrels with native yeast. The wine was bottled at the very end of fermentation to capture the natural bubbles in the bottle. The wine aged on lees in bottle before being riddled, disgorged, corked and caged, all by hand.

Pairs beautifully with a range of dishes, including grilled salmon, roasted chicken with herbs, summer salads with fresh berries, goat cheese and prosciutto crostini, and strawberry shortcake for a delightful dessert pairing.


Scar of the Sea Winery, established in 2012, is currently led by talented winemaker Mikey Giugni. With a focus on sustainable and organic farming, they employ biodynamic practices, emphasizing the harmony between the vineyard and the ecosystem. Located in San Luis Obispo County, their vineyards benefit from the cool coastal influence and marine fog, creating ideal conditions for growing Burgundian varietals like Pinot Noir and Chardonnay.
