ABOUT THE WINE

Cowhorn’s 2023 Spiral is a thoughtfully composed estate blend rooted in classic Southern Rhône varieties—primarily Viognier, Roussanne, and Marsanne—grown on biodynamic, certified estate vineyards in the Applegate Valley of Southern Oregon’s Rogue Valley AVA. 

The fruit is hand‑harvested at a range of ripeness to capture nuance and freshness, then pressed and fermented on native yeasts with minimal intervention. The resulting wine showcases ripe citrus (think tangerine and mandarin), key lime brightness, and tropical notes that frame a backbone of invigorating acidity. Its textural breadth comes from careful barrel handling without additives, allowing each variety to contribute its voice—Viognier for aromatic lift, Roussanne for richness, and Marsanne for structure. 

Pair this wine with shellfish and seafood dishes, lemon‑bright salads, or grilled white fish. Its acid drive also makes it an intriguing match for slightly spicy fare or creamy pasta with herbs.
