Bright, lively, and impressively refined for its class, the 2023 “Les Saussots” Bourgogne Blanc from Domaine Chavy-Chouet offers a pure, mineral-driven expression of Chardonnay. Aromas of citrus blossom, green apple, and subtle toast lead into a fresh, textured palate layered with lemon zest, crisp pear, and chalky undertones. ABOUT THE WINE
“Les Saussots” is a single-vineyard Bourgogne Blanc located just below Meursault village, with vines planted on clay-limestone soils that share much of the same geological makeup as its prestigious neighbor. In 2023, the vintage was marked by a cool spring and an even, dry summer—ideal for producing fresh, aromatic whites with focused acidity and ripe phenolics. The Chardonnay is hand-harvested and gently pressed before fermenting with indigenous yeasts in French oak barrels (10–15% new). Aging on fine lees for about 11 months gives the wine texture and subtle complexity while preserving its vibrancy. A textbook Bourgogne Blanc that delivers real Meursault character at a fraction of the price, it pairs beautifully with roast poultry, pan-seared fish, or soft cheeses like Brie or Saint-Marcellin.

ABOUT THE PRODUCER
Domaine Chavy-Chouet, led by Romaric Chavy, is one of Burgundy’s most exciting small domaines, with a strong presence in both Meursault and Puligny-Montrachet. The estate, passed down through seven generations, is known for its elegant, terroir-driven wines that combine traditional practices with a modern edge. Sustainable viticulture, meticulous vineyard management, and a hands-off approach in the cellar define Romaric’s philosophy. Fermentations are native, bâtonnage is avoided, and oak use is restrained, resulting in wines that express freshness, tension, and clarity. “Les Saussots” reflects Chavy-Chouet’s ability to elevate Bourgogne-level fruit into a wine of energy and detail—making it a reference-point white Burgundy at the regional level.
