ABOUT THIS WINE

This Chardonnay is a blend of several organically and biodynamically farmed parcels around Arbois, including sites with limestone-rich marl soils that emphasize precision and minerality. The 2023 vintage was marked by a cool, even ripening season that yielded wines of energy, purity, and aromatic lift.

Grapes were hand-harvested, whole-cluster pressed, and fermented with indigenous yeasts. The wine was aged for several months in a mix of neutral oak barrels and large foudres, allowing subtle texture development without oak influence. Bottled with minimal sulfur and no fining, it delivers aromas of lemon peel, pear skin, crushed rock, and a faint saline edge. The magnum format encourages slower evolution, preserving freshness and structure—making it ideal for cellaring. Serve with grilled seafood, alpine cheeses, or roasted vegetables for a pitch-perfect pairing.

Domaine du Pélican, based in Montigny-lès-Arsures in the Jura, is a visionary project founded in 2012 by Guillaume d’Angerville of Burgundy’s esteemed Domaine Marquis d’Angerville. Drawn by the Jura’s singular terroirs and varietals, he partnered with François Duvivier to create a domaine rooted in organic and biodynamic farming, site-specific winemaking, and minimalist cellar practices.
