Sourced from old Chardonnay vines averaging over 50 years of age, this cuvée captures the deeper, more concentrated expression of Savigny-lès-Beaune’s white terroir. The 2023 growing season delivered ideal conditions—cool nights and moderate heat—resulting in fruit with excellent balance and aromatic clarity. Fermented with indigenous yeasts and aged in mostly used oak barrels, the wine shows restrained richness, layered orchard fruit, and a core of mineral tension. Farming is certified organic, with close attention to vine health and soil vitality. Though less common than its red counterparts, this white Savigny is a compelling food wine—pair it with roast poultry, mushroom risotto, or soft-rind cheeses like Chaource.

Based in Meursault, Domaine Génot-Boulanger has undergone a quiet transformation under the stewardship of Aude and Guillaume Lavollée, the fourth generation at the helm. Since taking over in 2008, they’ve led the estate into certified organic farming and embraced a more refined, terroir-transparent style of winemaking. The domaine spans prestigious appellations across the Côte d'Or, but even their lesser-known crus are treated with the same respect and detail as their grands vins.
