“Meix Chavaux” is a lieu-dit located just north of Meursault village, below Les Tillets and adjacent to Narvaux, where shallow limestone-clay soils and cooler exposures yield a wine of finesse and gentle volume. Jean-Marc Roulot has long favored this site for its balance between mineral focus and early approachability. The 2023 vintage shows excellent purity and poise, with vibrant fruit and a finely detailed structure.
The wine is organically farmed, hand-harvested, and vinified with native yeasts in French oak barrels (approximately 15–20% new). Aged for 12–15 months without bâtonnage, and finished in tank before bottling, “Meix Chavaux” offers the layered citrus and orchard fruit of classic Meursault, but with the restraint and precision that define Roulot’s style. Ideal with seared scallops, roast chicken with lemon-thyme jus, or a creamy polenta.
