ABOUT THE WINE
Les Perrières is a single-vineyard Bourgogne Rouge sourced from limestone-rich soils on the outskirts of Savigny-lès-Beaune. The vineyard's stony, well-drained terroir—reflected in its name, which derives from pierre (stone)—produces Pinot Noir of exceptional freshness, aromatic precision, and mineral character, elevating this cuvée well beyond the expectations of a regional Burgundy.
Produced from 100% Pinot Noir, the 2023 vintage reflects Domaine Simon Bize's philosophy of expressing vineyard character through traditional, low-intervention winemaking. The grapes are hand-harvested and fermented with a significant proportion of whole clusters, enhancing aromatic complexity, structure, and freshness. Gentle extraction preserves purity and finesse, while aging in French oak barrels, with only a restrained percentage of new oak, adds subtle texture without overshadowing the fruit.
The wine opens with expressive notes of red cherry, wild raspberry, cranberry, violet, forest floor, and gentle baking spice. The palate is vibrant and finely textured, supported by bright natural acidity and chalky tannins that carry through a persistent, mineral-driven finish.
