ABOUT THE WINE
Aux Grands Liards is sourced from one of Savigny-lès-Beaune's finest village vineyards, situated on well-drained clay and limestone soils that consistently produce Pinot Noir of exceptional finesse and aromatic precision. The old vines yield naturally low quantities of fruit, contributing concentration while preserving the hallmark freshness of the appellation.
Made from 100% Pinot Noir, the 2023 vintage reflects Domaine Simon Bize's dedication to expressing site over winemaking. The grapes are harvested by hand and fermented with a significant proportion of whole clusters, enhancing aromatic lift, structural complexity, and transparency. Gentle extraction preserves the purity of the fruit, while aging in French oak barrels with a restrained use of new oak adds subtle texture and nuance without masking the vineyard's character.
The wine opens with expressive aromas of red cherry, raspberry, cranberry, violets, forest floor, and delicate baking spice. The palate is supple yet energetic, balancing bright red fruit with chalky minerality, fine-grained tannins, and lively acidity. Its elegant structure makes it approachable in its youth, while its balance and concentration allow it to develop gracefully over 8–12 years, revealing increasing complexity with bottle age.
A natural partner for classic Burgundian cuisine, Aux Grands Liards pairs beautifully with roast chicken, duck breast, pork tenderloin, grilled salmon, mushroom dishes, and soft-ripened cheeses.
