2023 Enderle & Moll Weis & Grau, Baden, Germany

Aromas of white peach, apricot, pear, yellow apple, citrus peel, and white flowers, with subtle herbal and earthy notes. On the palate, it’s juicy and energetic but not simply fruity—the skin contact adds gentle tannin and a slightly grippy, tea-like texture. The finish is dry, saline, and slightly bitter, with hints of citrus pith, herbs, pepper, and almond.

ABOUT THIS WINE

This wine is a field blend of roughly equal parts Weißburgunder and Grauburgunder farmed organically & biodynamically from sandstone and limestone slopes in the Baden region of Germany.
The grapes undergo 4 to 5 days (up to a week in some lots) of maceration and fermentation on the skins to extract a copper hue, gentle structure, and subtle phenolic grip.  Following skin contact, the wine is gently pressed off the skins and transferred into stainless steel tanks or neutral old oak barrels to mature on its fine lees for approximately 10 months. The wine is bottled with a light/gentle filtration and a small, conservative addition of sulfur (total sulfur typically kept below 50 mg/L), with no fining.

ABOUT THIS PRODUCER

Enderle & Moll is a cult producer from Münchweier in Baden, Germany, founded in 2007 by Sven Enderle and Florian Moll. Starting on a tiny scale with leased vineyards, old equipment, and just a few barrels, they became influential for a distinctly delicate, terroir-driven approach to German wine. Their vineyards include old vines—some Pinot Noir dating to the 1950s—grown on soils such as Buntsandstein (sandstone) and Muschelkalk (limestone), with organic farming and biodynamic influences.

The estate is best known for Spätburgunder (Pinot Noir), particularly wines such as Liaison, Buntsandstein, and Muschelkalk. Rather than producing powerful, heavily extracted Pinot, Enderle & Moll favored lighter, aromatic wines emphasizing red fruit, herbs, earth, minerality, and freshness. Their cellar work followed a similarly low-intervention philosophy, using spontaneous fermentation, gentle extraction, and mostly older barrels. They also produced whites and skin-contact wines from varieties including Weissburgunder, Grauburgunder, Müller-Thurgau, and Auxerrois.

The winery evolved considerably over its lifetime: Sven Enderle eventually departed, while Florian Moll continued with a small team. 2023 ultimately became Enderle & Moll’s final vintage, making wines such as the 2023 Weiss & Grau part of the estate’s closing chapter. Enderle & Moll’s legacy lies in helping demonstrate that German Pinot Noir—and Baden wine more broadly—could be light, savory, naturally made, and deeply expressive of vineyard and soil, earning the estate a devoted international following.
