ABOUT THIS WINE

The fruit for this lovely Chablis is hand-harvested from four specific plots along the Montmains clay slope. The wine is fermented spontaneously in temperature-controlled stainless steel vats using only indigenous (naturally occurring) yeasts. The winemakers have allowed the wine to undergo spontaneous, natural malolactic conversion to soften the bright, crisp acidity. It is matured entirely in stainless steel tanks, avoiding all oak contact to preserve the wine's pure, fruit-driven profile. It ages on its lees (the spent yeast) for 14 to 20 months to add texture, richness, and depth. Finally, the wine undergoes moderate cold stabilization and is fined with bentonite if needed. It is given a single, gentle filtration just prior to bottling.
