ABOUT THIS WINE

“Constance” is sourced from younger Chardonnay vines rooted in Kimmeridgian limestone soils, the same ancient marine-rich geology that defines nearby Chablis. These soils lend the wine its notable freshness and mineral precision. Grapes are hand-harvested, gently pressed, and fermented with native yeasts in temperature-controlled stainless steel tanks to preserve vibrancy and detail.

Aging on fine lees for up to 12 months enhances the wine’s texture and complexity while maintaining a focus on purity. Minimal intervention and low filtration at bottling ensure the wine retains its expressive character.

Expect flavors of lemon zest, crisp pear, and wet stone, supported by mouthwatering acidity. It pairs beautifully with oysters, poached white fish, light poultry dishes, or a fresh goat cheese salad.

Olivier Morin runs a small, quality-driven estate in the village of Chitry-le-Fort, located just outside the boundaries of Chablis. Since taking over the family domaine in the early 1990s, Morin has championed a natural, hands-off approach in both vineyard and cellar. Farming is sustainable, and his commitment to showcasing the distinctiveness of Chitry’s limestone soils is evident in every bottle.
