ABOUT THE WINE
Crafted under the broad and flexible Côteaux Bourguignons appellation, L’Aigle et la Chouette reflects Tercet’s commitment to crafting vibrant, terroir-transparent wines outside the boundaries of Burgundy’s traditional hierarchies. The 2024 vintage is a blend of organically farmed Gamay and Pinot Noir from parcels across the Côte Chalonnaise and northern Mâconnais, fermented with native yeasts and a high percentage of whole clusters. Aged in old barrels and concrete, the wine is bottled with minimal sulfur, preserving its purity and electric energy. Light-bodied yet layered, this wine is made for the table—pair it with roast duck, lentil stew, or grilled trout with herbs.

Tercet is a young, progressive micro-négociant in Burgundy, focused on crafting small-batch, low-intervention wines from underrepresented appellations and vineyard sites. Founded by a trio of friends with backgrounds in viticulture, oenology, and gastronomy, the project emphasizes organic sourcing, wild fermentations, and minimal inputs in both vineyard and cellar. Their labels—poetic and symbolic—mirror their thoughtful and expressive style.
