This certified biodynamic Vermentino comes from Troon’s estate vineyard in the Applegate Valley, where granite-rich soils and a dry, high-desert climate echo the variety’s coastal European origins. The grapes are hand-harvested and whole-cluster pressed, then fermented with native yeasts in neutral oak and amphora to enhance texture without diminishing freshness. Aging on the lees adds savory depth, while the absence of additives or heavy manipulation ensures purity of fruit and site.

This is a versatile white with structure and nerve—ideal with shellfish, grilled vegetables, herbed poultry, or as a zesty companion to salty cheeses and sun-drenched patios.
