ABOUT THIS WINE
100% Carricante from Etna D.O.C. The vineyards are situated on the Eastern slope of Mount Etna, and come specifically from a plot called "Contrada Volpare." The altitude here is 700m a. s. l. The vines are grown in the "bush vine" style ("albaerllo etna) on small terraced made of fry lava-stone walls. The soils here are sandy and volcanic, with high organic substance and rich in minerals. The winemakers limit the use of sulphur and copper.
The harvest for this wine took placed during the first ten days of October. The grapes are harvested by hand then go direct to press. The direct press undergo a process of cryomaceration for three hours. The must is cold clarified and fermented, 90% in stainless steel and 10% in used French oak barrels- aged on the lees for 8 months.
