ABOUT THIS WINE
The "Altopiano" is produced from organically and biodynamically farmed Müller-Thurgau grapes grown at elevations exceeding 700 meters in the Dolomites. The grapes are destemmed and gently pressed using pneumatic methods, followed by a spontaneous fermentation with native yeasts. The wine is aged on its lees in stainless steel tanks until April and bottled without filtration or fining, with minimal sulfur added only if necessary . This meticulous process yields a wine that is both expressive and true to its alpine terroir. Its vibrant acidity and complex flavor profile make it an excellent companion to dishes such as shellfish, lean fish, spicy cuisine, and a variety of appetizers .
