ABOUT THIS WINE

Made from 100% Assyrtiko sourced from ungrafted, basket-trained vines (kouloura) grown in Santorini’s ash- and pumice-rich soils, Thalassitis is a benchmark of the island’s signature style. The 2024 vintage offered bright, healthy fruit with remarkable natural acidity thanks to the island’s dry climate and cooling sea winds.

Fermented in stainless steel to preserve clarity and precision, the wine sees extended time on fine lees to build texture while maintaining its linear structure. Expect flavors of citrus peel, pear skin, flint, and a distinct saline edge that reflects Santorini’s maritime terroir.
