Sourced from loess and primary rock soils in the cool-climate Kamptal region, the 2024 Sauvignon Blanc reflects Matthias Hager’s commitment to natural balance and terroir clarity. The grapes are farmed biodynamically with full ecological sensitivity—cover crops, composting, and minimal treatments—all aimed at soil vitality and vine health.
Harvested by hand and vinified with minimal intervention, the wine undergoes spontaneous fermentation with native yeasts in stainless steel, followed by several months of lees contact to enhance mouthfeel. This results in a precise, bone-dry expression where fruit and savory elements coalesce: gooseberry, lemon verbena, and subtle green pepper overlay a chalky, linear frame. Food-friendly and refreshingly understated, it pairs beautifully with goat cheese, sushi, spring vegetables, or shellfish.
